When we visited Italy in September 2017, we were treated to wonderful hospitality at the Ca' Del Baio winery. Famous world-wide for their top-notch Barbarescos, Ca' Del Baio impressed us with all their delicious Piedmont wines. The Asili Barbaresco is crafted with Nebbiolo grapes from the southwest slopes of the Barbaresco region. We LOVE this wine - it is absolutely stellar!

NOTES FROM THE WINERY:

From this vineyard, grown in one of the most well-known Langa Cru in the world, the history of Ca 'del Baio begins and this wine contains the precious fruit of our oldest, refined and elegant vines.

VINIFICATION AND MATURATION:

The destemmed grapes ferment on the skins in heat-conditioned steel tanks for about 60 days. The grapes are macerated by submerged cap peels. The wine ages for 30 months in wood, partly in large oak barrels and partly in French tonneaux. Refine in bottle for 6 months.

ORGANOLEPTIC CHARACTERS:

Bright color, garnet red with orange nuances; intense aroma, with fruity aromas of marasca and violet flowers. Spicy notes of black pepper, licorice and goudron; flavor: dry, warm, soft, reveals a velvety taste, rich and persistent.

IDEAL COMBINATIONS:

Suitable for red, braised and stewed meats, game, well-matured cheeses. Over time it becomes a meditation wine.
