Cornish Game Hens with Jam Glaze
The secret to a dinner party that lingers on the palate for days; the pairing of a Pinot with just the right foods. Make something easy, but refined- so you can enjoy your guests more and not be a slave to the stove.
2 Cornish game hens
1/8 cup plum jam (or raspberry jam if you can’t find plum)
1/8 cup apricot jam
1/8 cup honey
Salt and pepper to taste
Pre-heat oven to 325 degrees. Rinse game hens and pat dry. Place in baking dish. Sprinkle with salt and pepper. Bake 1.25 hours, basting with their juices after 30 minutes. Meanwhile, combine both jams and the honey in a cup. Mix well. Remove hens from oven after 1.25 hours and pour jam mixture over them. Return to oven and bake 15 minutes more.
Serve with a delicious Pinot Noir!
