Appellation: Santa Maria Valley
Vineyard: Bien Nacido – Block 8
Clones: Dijon 113, Dijon 115, Wadensvil (2A), Mt. Eden & Pommard
Harvest: By hand between August 29th and September 6th
Yield: About 1.75 tons per acre
Crush: Whole-berry destemmed in to small, open-top fermenters as individual clonal lots
Inoculum: 3001, RC212 & AMH after a 3-day cold maceration
Fermentation: 10-14 days active, with punch downs 2 times daily
Elevage: 18 months in 228L French Oak barrels, 50% new
Racking: Once in April 2019, then again prior to bottling in March 2020
Bottling: April 7, 2020 – without fining or filtration
Alcohol: 13.8%
pH: 3.49
TA: 0.605 g/100mL
Production: 670 cases
